The last time I took a road test, I did it on a driving range next to the licensing office, not on an actual open road. You do the usual manueuvers, like starting, stopping, backing, parallel parking, three-point turning, approaching and stopping at stop signs or yield signs, left turns, right turns. avoiding obstacles (steering through a patter of traffic cones, usually).
